He is Risen!

He is risen indeed, alleluia, alleluia!

I honestly don't think that in our earthly life we will experience anything closer to heaven than Easter Sunday morning Mass celebrating the Resurrection of Our Lord. Maybe it's the pregnancy hormones, or the lack of sleep from basket and dinner preparations, or the joy of having made it through Lent, but I was moved to tears.

It is simply heavenly to see the little ones decked out in their Easter finest. Little girls in pastel dresses and white patent leather mary-janes, and little boys in vests and ties.To see the altar dressed in gold linens, the statues and art unveiled, the fragrance of hundreds of flowers adorning the altar and church. When the opening hymn began with the triumphant sounds of the brass quartet, and the congregation began to sing Jesus Christ is Risen Today, I was overwhelmed with the notion that this was a glimpse of heaven. There must have been angels all through that sanctuary.

Of course, we are still dwellers of this earth and our Easter Mass experience brought with us ample reminders of the work we are called to do while still here.

Little Peter fussed till he finally gave in and fell asleep, after twice letting his dad know in no uncertain terms that he was to be held by Mom.

We have a cardinal rule of Mass survival that states that the feet of children under three never touch the floor in order to avoid the inevitable fall from the kneeler and accompanying head bump. We foolishly broke that rule and of course little Gabe took a good spill.

Then there was Joseph, who looks so angelic in this photo, he was calmer than normal because he wasn't feeling well. We thought he had done fairly well until we heard after Mass that when we weren't looking he was poking the backsides of those waiting in line to kneel at the communion rail, particularly the women (we also have another rule of Mass that we sit in the front row whenever possible). Yes, that's my son.

After Mass we enjoyed a wonderful family dinner, Grandma's much too generous Easter egg hunt, and homemade carrot cake. The weather was beautiful, the food delicious, and it was another memorable family celebration. Of course at the end I fell into bed exhausted, but so incredibly thankful for such a beautiful day.

I could've written this post about Easter... I too need the full fifty days of Easter to unravel the mystery of the Resurrection! How wonderful the Church in her wisdom gave us so much time to celebrate. I think any mom who tries to pull off a holiday celebration knows that it is hard to contemplate or ponder the meaning of anything when you're so busy trying to coordinate baskets, and dresses, and meals, and somehow clean a house when seven little ones are so bent on it's destruction. I even remarked at our soccer games on Saturday morning (yes, as if this weekend weren't busy enough, we had our first spring soccer games too) that it was a good thing we had an octave of Easter because that was the only way we were going to have time to dye eggs. I just couldn't fit it in earlier.

Easter Photo Parade

My kids before bloody noses and Easter candy spoiled their Sunday best. Thanks for the duds, Grandma.
Almost a great family shot, if only Juju would have turned around. Eight people, one fraction of a second. It just seems impossible to capture.

Joseph is loving his new cars and carrier. Never have I seen anyone with such a fascination for wheels. I worry about him at sixteen :)

Here she flashes that sweet smile so elusive earlier. She loved her yellow dress, and a highlight of my Easter was hearing her squeal with delight as her egg came out of the dye a vibrant shade of her favorite color. She liked that magic trick a lot. She did not, however, get the concept that if she banged the egg on the table it would break.

My sweet Sophia, ever the princess.

My Bear, flashing her prettiest smile.

When did these girls grow so big? Banana wore shoes that made her mom envious. They were so cute, and too grown up. She's still supposed to be my little girl...
If it was hard to capture our little family of eight, trying to get 13 cousins to stop for a picture after being ramped up on Easter candy and wound up from Grandma's Easter Egg Hunt was impossible. 42 pictures and this is as good as it gets.

Our bunny cake, absent last year because I was too busy, made his return this year. Aunt Missy sure enjoyed it!

I much prefer carrot cake.

Still My Favorite Easter Picture

Seriously, nothing says Easter like a scary, baby-snatching bunny. How much do you think poor Gabe's therapy sessions will cost us?

Easter Bunny?

Or Boogey Man?

Poor little Gabe might never let Uncle Tim hold him again...

This picture reminded me of Patrick Madrid's post. I am lucky enough to attend the same the parish as Pat, I will have to share this picture with him.

Easter Cakes

I traditionally bring cakes to our family Easter dinner. The girls and I have been making them for a few years and I thought I would share a few of our favorites. I know we are only half way through Holy Week, but I am starting to get the ingredients together so that we are ready to bake.

First up is our bunny cake:
I found the instructions a few years ago on the Internet. Unfortunately, I don't remember where. I make the cake in two round cake pans. Layer them then cut them in half (this will make two bunnies). Then stand one half on its side and frost. Cut out a notch in the front to rest the ears. The ears are made from one large marshmallow cut on the bias and the cut end is dipped in sprinkles. The cheeks are another marshmallow cut in half vertically, there is another whole marshmallow used for the tail. The fur is made from toasted coconut, and the grass from colored coconut. This cake is now an Easter staple for us.

Last year I also found this cake in Taste of Home magazine. I think it would be more appropriate for a late summer cake, but one key ingredient is only available now-- yellow chick peeps. I only know one person who will actually eat those things (I have a crazy little sister), but they do make for a nice sunflower cake.

The chocolate chips should be in concentric circles, but I had a 2-year old and 5-year old helping:) Also, I will separate all the peeps next time to make a less square shape.

This year I am thinking of a few changes, although I seem to be short on the creativity gene. I would like to turn the bunny into a lamb. Any ideas how to do this? I am also thinking that we will skip the sunflower cake for Easter and do it later. Anyone know the shelf-life of peeps? I'm hoping to replace that with a cross shaped cake, or maybe a cheesecake. Any other good Easter dessert ideas?

UPDATE: I found that someone had googled Easter Cakes and found my blog, I love sitemeter. Deciding to look for inspiration, I took a quick look. I came across this blog entry and had a good laugh. I just had to share- http://cakewrecks.blogspot.com/2009/04/easterly-wind-is-blowing.html
